Crustie's Flourless Cake
A product of his first passover
LONG TIME NO SEEEEEEE
I’ve been slacking on recipes, but truly baking more than ever. This is my attempt to put an end to this blasphemy!!!
I attended my first ever Passover and I volunteered to bake a cake. Why did I do that? So I could be the bell of the ball. So I could win the best guest award. So I could win the coveted Mr. Best Non-Jew at Passover award. You can assume that my dashing looks, charming personality, and chocolatey chocolate cake won me rights to all of the above.
This cake is my spin on a fudgey flourless cake. Imagine each bite of a cake REQUIRES you to take a sip of milk. Now make it a reality. Thats this cake.
Recipe
Ingredients
10 large eggs (cold)
450g bitter sweet chocolate chips
100g dark chocolate (roughly chopped)
275g unsalted butter
60g strong coffee (I used espresso)
powdered sugar and or fruit for topping
Steps
preheat oven to 325 and grease a 9 inch spring form pan
Prepare a roasting dish (I used a big disposable foil one). and by prepare I just mean buy. Wrap your springform pan in foil (twice). You are going to place the springform pan into the roasting pan, and fill the roasting pan with boiling water. Trust me.
Whip eggs in stand mixer on medium high until very foamy and doubled in size (5ish minutes)
While eggs whip, add chocolate, butter, and coffee to a bowl placed on top of a pot filled with simmering water. This is an indirect method to melt the chocolate and not burn it.
Melt chocolate and butter, stirring occasionally until fully combined. It may appear to separate, but this is normal. Trust me baby, I love you.
Once chocolate is smooth, fold in 1/3 of egg mixture to temper. Mix gently until there are very few streaks of egg left. Repeat this process until fully incorporated.
Pour batter into spring form pan. Place spring form pan into roasting pan. Place roasting pan into oven
Pour boiling water into roasting pan until it comes up about halfway on the springform pan.
Bake for 30-38 minutes. The top of the cake should appear brownie like and be slightly pulling away from the edges.
Allow to cool on a wire rack, then place into fridge over night. Or if you’re me, place straight into freezer for 1 hour and then into fridge for another hour then serve while so nervous that you ruined the party and everyone hates you.
Top with fruit of your choice (I chose raspberry) and dust with powdered suagar.
Eat whole cake in one sitting and be the king (or queen) of the world.
